Eduardo Rios 87ddd02038 fix: correct sientia_do pin to the version actually released (1.12.3) ...

The library's release pipeline bumped a patch version (1.12.3), not the
minor bump (1.13.0) the feat: commit prefixes would normally produce --
correcting the pin here to match what was actually published.
