fix: bump sientia_do to 1.12.5
sientia_do 1.12.5 pins the psycopg2 driver in the Postgres engine URL. Without it, rebuilding the image pulls SQLAlchemy 2.1.x, whose default 'postgresql://' driver is psycopg (v3), and the worker crashes at startup with "ModuleNotFoundError: No module named 'psycopg'".
